3Pavlova
The age-old question, ‘who created the pavlova recipe?’ is one that causes tension between Australians and New Zealanders. The classic pavlova recipe, complete with its crispy meringue, made from egg whites, and whipped cream topping, is beloved by both nations. Where did the pavlova recipe originate? National pride aside though, both Aussies and Kiwis can agree that this meringue-based dessert is an iconic showstopper at every event. We can all agree that the pavlova recipe was named after the Russian ballerina, Anna Pavlova, who visited both countries in the 1920s. The story in New Zealand says that the chef behind the pavlova recipe claimed inspiration from her tutu - and we can see why - that egg whites and sugar meringue topped with whipped cream is as fluffy as a tutu. How do you make the best pavlova possible? Pavlova is notorious for frightening even the most well-seasoned bakers (what with the separating egg yolks from egg whites, hoping to see stiff peaks form and nailing the meringue mixture!), but with our best pavlova recipe you can expect a crisp meringue shell and soft, fluffy marshmallow centre every time. However, if you do come into strife, our food editors have answered every pavlova question you could imagine below in our recipe notes. Top with whipped cream with its beautiful soft peaks, fresh fruit (fresh berries work well) piled high, and icing sugar (or confectioner's sugar, for those in the US wanting to have a crack at antipodean dessert cuisine) form the perfect show-stopping masterpiece on a cake stand. You could also add a drizzle of lemon curd, if you fancy it. Serve this classic pavlova recipe with whipped cream cold, or at room temperature (if it's not too hot a day - you don't want that whipped cream to topple), We're all for getting creative with our pavlova recipes, be it a rocky road pavlova, pavlova trifle, or an espresso martini pavlova. We even have an air fryer pavlova recipe. And, check out our collection of pavlova recipes to impress. Additional recipe notes by Alison Adams - Food Writer and Recipe Tester
4Chocolate mousse in minutes recipe
What's better than a decadent chocolate mousse recipe? A easy chocolate mousse recipe that's ready in mere minutes. With its timeless elegance, chocolate mousse is always in fashion. From its first appearance in France in the 1800s to then becoming the dinner party superstar of the 1970s, chocolate mousse still appears on restaurant menus today. Chocolate mousse sings of romance and is a perfect date night dessert. Why is this our favourite easy chocolate mousse recipe? This, our favourite chocolate mousse recipe, simplifies the chocolate mousse-making process, proving it's easy to make chocolate mousse at home. Rather than whipping the egg whites separately, in this clever recipe you beat the whole eggs for 5 minutes. What results is a light-as-air, silky chocolate experience. 5Sticky date pudding
Classic sticky date pudding recipe An ultra-moist, brown sugar cake doused in rich butterscotch sauce, our classic sticky date pudding recipe is what comfort food eating is all about. Is there a more glorious pudding in the world than sticky date? I’m hard-pressed to find an equal. With its tender crumb dotted with nearly imperceptible pieces of date all drizzled with a smooth caramel sauce. It’s what pudding dreams are made of. It seems as though sticky date pudding has been around forever, but this English classic didn’t hit the mainstream until the 1970’s, becoming a firm fixture on the menus in mod-oz restaurants here in Australia in the late 1980’s. What makes sticky date pudding so good? The secret to the great sticky date pudding is twofold. First, soaking the dates in a mixture of warm water and bicarb not only works to soften the dates until pulpy, but when this mixture is added to the cake batter it starts activating the self-raising flour as well as helping to tenderise the crumb. The second reason lies in soaking the cake in the sauce. While the cake is still warm, use a skewer to poke holes over the top and then pour some of the caramel sauce over the cake. As it absorbs, the cake becomes even more moist and tender. Serve the remaining sauce to be added as desired. We love the flavours of sticky date pudding, we’ve used them in many forms, like our cheesecake, trifle and Christmas pudding. we’ve converted it to a mug cake and, of course, turned it into a cocktail. 6Amazing basic meringues recipe
It’s easy to see why meringues are so popular: they simultaneously shatter and melt in our mouth at the same time and they’re extremely versatile. A staple in every baker’s repertoire, meringues may appear difficult to master, but they’re actually a lot more simple than you may expect. What's amazing about this basic meringue recipe? Thanks to this easy foolproof recipe, you’ll be met with the perfect French meringues every time you put your whisk to work. In fact, unlike Italian meringue and Swiss meringue (see the notes to find out the difference), French meringues are the most commonly used (and easiest) variation to master. It really is amazing to watch these treats come to life! If you follow this method, you shouldn’t have undercooked meringue, cracked tops or brown peaks. Our favourite part about this recipe is that they serve as a great ‘blank canvas’; so you can top them with cream and berries, use them as layers in a cake, or eat them plain. 7Carrot cake
Is it odd that one of the greatest cakes in the world is made with a vegetable? Not at all. Carrots have a natural sweetness that becomes more pronounced the longer they cook. This carrot cake recipe presents carrot cake with a swoon-worthy creamy cream cheese frosting at its purest. There's no need for crushed pineapple or walnuts here. There's a reason it's been given 5 stars by more than 400 cooks who've made this cake. One bite and you'll be hooked on this carrot cake. Why is this such a delicious carrot cake recipe? In this moist carrot cake recipe, the earthiness of the carrots pairs beautifully with the warmth of ground cinnamon and the molasses-ey profile of both brown sugar and golden syrup. With a moist crumb, this cake is sturdy enough to carry the rich, fluffy, cream cheese frosting, yet is melt-in-the-mouth tender. In fact, I think this might be our best carrot cake recipe yet. And that's saying something (we have a great selection of carrot cake recipes on taste.com.au). Entertaining a crowd? You could try our gluten-free carrot cake recipe, our carrot cake cheesecake or the breakfast-boosting carrot cake pancakes.
8Famous lemon slice recipe
What is it about Australians and lemons? We can’t get enough of them in both sweet and savoury dishes. We Aussies love a slice too, so it’s little wonder that this lemon slice recipe comes in at number three of taste.com.au’s most popular slice recipes ever (pipped at the post by the ever-popular caramel and Mars Bar slices). In this easy lemon slice recipe, we use both the lemon rind in the base and the juice in the icing, resulting in a bright and zesty taste that just sings in your mouth. Combine these lemony feels with our other favourites, condensed milk and buttery granita biscuits, and we have an Aussie classic for the ages. Why has this easy, no-bake lemon slice recipe become famous? This no-bake lemon slice recipe is perfect for a lunchbox, afternoon tea or just a sweet treat all year round. So few ingredients, such simple steps and foolproof, delicious results! Yum. 12Quick and easy apple crumble recipe
For me, the first apple crumble recipe I bake each year signals the start of autumn. Or is it the other way around? First, I notice that the days are a bit shorter or that the air smells crisper, next thing I know I’m taking a baking dish filled with a buttery sweet apple mixture topped with a crunchy sweet crumb from the oven and drizzling it with cream or a generous helping of vanilla ice cream. There are few things more comforting and a warming, homemade apple crumble. Why is this our favourite easy apple crumble recipe? This apple crumble demonstrates simplicity at its best, and that's what cold weather demands. With only 7 ingredients, the oven does all the heavy lifting (not only cooking but also warming the kitchen and filling the house with a heavenly scent). One of the best things about this apple crumble recipe is that it’s made mostly on pantry staples. 13Tiramisu recipe (with video)
Tiramisu is an Italian dessert that translates to “pick me up”, and it certainly does just that. What's in a traditional tiramisu recipe? This trifle-style tiramisu recipe consists of layers upon layers of delicious savoiardi sponge finger biscuits that have been dipped in coffee and layered with creamy mascarpone and cacao. Although it hails from Italy, these days the tiramisu recipe is an Australian favourite. It’s a perfect choice for dinner parties as it can be prepared in advance and your guests are sure to go back for seconds. It might be tempting to dig in as soon as those melt-in-your-mouth layers and the final whipped cream and mascarpone mix topping are in the dish, but it really is best to keep the completed tiramisu recipe in the fridge for at least 2 hours, if not longer. This allows the coffee soaked ladyfingers biscuits to really mop up the bitter coffee flavour to perfectly offset that sweet mascarpone cheese and whipped cream (sprinkled, of course, with cocoa powder). While some people like to add twists, such as adding chocolate, in this tiramisu recipe we have kept things simple (although spiking it with marsala doesn’t hurt!). If you're feeling creative, we also have more than 50 riffs on the classic tiramisu recipe to try (ideal for entertaining, particularly at Christmas time), including our espresso martini edition. This tiramisu recipe was originally shared by Dixie Elliot. Additional recipe notes by Alison Adams - Food Writer and Recipe Tester.
14Basic sponge cake recipe
Our versatile basic sponge cake recipe This simple sponge cake recipe is easy to whip up for any occasion, and cleverly straddles the line between being soft, light and fluffy while still holding its shape and having a solid crumb. That's no mean feat, but this super sponge shows you it can be both structurally sound yet delicate, simultaneously. Tips for making the perfect sponge cake Once the cake mixture is homogeneous, we spin the cake pans to make sure the bubbles are evenly distributed. The cakes are cooked when they spring back when lightly touched. We also suggest turning the cakes out onto wire racks that have been lined with baking paper, to avoid wire marks on the top of the cakes. (We also have some hot tips in our recipe notes, if you're eager to learn more!) What are some recipes I can use this sponge for? This genoise sponge recipe is the perfect vehicle to be layered with jam and cream, but if you’re after a few more ideas, turn it into a passionfruit glazed lemon curd cake, use it in our berry and vanilla bean trifle or incorporate it into this recipe that has a tiramisu twist. 15The perfect lemon meringue pie recipe (with step-by-step video)
Call off the search: you've found the perfect lemon meringue pie recipe This lemon meringue recipe has everything going for it: just the right amount of creamy, sour-meets-sweet, tangy lemon filling, cloud-like fluffy meringue with its soft, slightly scorched peaks, and a perfectly crisp buttery base. Just remember to allow time to chill each layer. (The lemon layer needs a good three hours in the fridge, so be sure to prepare your show-stopping pie ahead of time!). Why is this our go-to lemon meringue pie recipe? For starters, we love a lemon dessert in almost any form, but this recipe takes the cake (or pie, as it were). As Taste member Lin proclaimed: "Fantastic. Pie turned out perfectly. I didn't change anything. I will definitely be baking this yummy pie again." And many users have echoed her sentiment. We give this recipe 5 stars. We have plenty of delicious lemon dessert recipes for the lemon lovers (from the simple to the complex!), and other sweet treats based on the flavours of lemon meringue pie, too. 16Bread and butter pudding
This pudding is a staple in the British kitchen, and why wouldn’t it be? It’s a simple recipe and the ideal way to use up stale bread, so if you’re looking to limit the amount of waste in your household, try this sweet and comforting dessert! The slices of bread soak up all that buttery goodness, and the sprinkling of sultanas adds an irresistible tang. What’s more, you can swap in any bread you have on hand - fruit toast, that half of a loaf of sourdough that’s been sitting in the freezer, your favourite everyday whitebread. There’s a clear reason that this baked pudding has remained a favourite for so many years. However, don’t let tradition stop you from experimenting with some savoury tastes - I love turning this dish into a breakfast sensation by serving it with scrambled eggs and mushrooms!
17Jelly slice
For many of us, jelly is a treat that’s often left behind with our childhoods – alongside the likes of Barbies, The Wiggles and long division. And yet, this refreshing, brightly hued, wobbly dessert need not be relegated to the category of kids’ party treats. Why should kids have all the fun? In fact, we think this playful jelly slice recipe is grown-up enough that it’ll please adults and children of all ages. This one came to us from Taste member ‘bird55’. Made up of three simple layers (a buttery biscuit base, a lemony condensed milk centre and a raspberry jelly top), this no-bake slice is easy to make and easier to eat – just ensure you allow enough time to chill and set each layer. The grown-up jelly fun doesn’t end at the simple yet delicious jelly slice: we have plenty of jelly recipes adults will adore. From a pretty-in-pink rosé jelly and vanilla tart to our Aperol spritz jelly shots, and from a tropical pina colada jelly slice, to a show-stopping rhubarb, strawberry and gin jelly, these passionfruit and prosecco jelly cups, and a layered Singapore sling jelly cake. There’s even a beetroot jelly cheesecake, if you’re feeling adventurous. And, come Christmas time, our jelly-filled trifles are go-to desserts to please a crowd. Indecisive? 22Our perfect apple pie recipe
Classic homemade apple pie recipe When it comes to homemade desserts, surely apple pie tops the list. It’s just so honest, nearly earnest in its desire to please. Where other homemade desserts like chocolate mousse, tiramisu and even trifles will turn up on a restaurant dessert menu, apple pie has no place there. It’s a homebody. How do you make a perfect homemade apple pie? In this apple pie recipe, we use two types of flour to create the perfectly crisp, yet tender, pastry and the apples are cooked first in butter and sugar giving them a butterscotch-y edge. The most important part of this apple pie recipe? The ice-cream! It's an indispensable ingredient as the contrast of creamy cold ice-cream hitting the crispy warm pastry is part of your apple pie experience. This recipe is apple pie perfection! Aside from vanilla ice-cream, you can serve a slice of this classic apple pie alongside a warm apple pie martini. Or, try making this apple pie cheesecake next.
23Golden syrup dumplings
Australians love their golden syrup, with most households having a stash of this honey-like condiment in their cupboard. Kept on hand to be drizzled over ice cream or pikelets, and brought out when making a batch of ANZAC biscuits. And then there’s golden syrup dumplings. Tender fluffy clouds of dough swimming in a sweet and syrupy bath, golden syrup dumplings are one of Australia’s favourite desserts. In this, our favourite iteration of this recipe, golden syrup is added to the dumplings and is the sauce they simmer in, providing a double hit of mollasses-y goodness. Apart from being super simple, budget-friendly and absolutely delicious, this 6 ingredient golden syrup dumplings recipe can be made in just over half an hour. Served warm with the cold contrast of ice cream or a pour of silky thickened cream, golden syrup dumplings must be eaten in a bowl. Which means they can be eaten on the couch, right? 25Melting moments
Small and sweet, melting moments live up to their name.
26Mars Bar slice recipe (with step-by-step images and video)
Everybody loves a Mars bar! In fact, they were recently voted the world’s second most popular chocolate bar - pipped at the post by Cadbury milk chocolate (personally, I think it was rigged!). So, it’s little wonder that when melted down with butter and mixed with rice bubbles, the result is amazing. This Mars bar slice recipe is our favourite as it has the sneaky addition of golden syrup, which gives the slice an extra buttery caramel flavour. Another reason we love this recipe is that not all the Mars bar is melted. Some is reserved, chopped and stirred through the mixture, upping the mars bar element and providing extra texture. Genius, right?
27Vanilla bean panna cotta recipe
Classic panna cotta recipe It’s amazing how exotic foods sound in another language, especially Italian. Bollito misto translates to mixed boiled, bagna cauda is hot sauce and Gnudi means naked. Panna cotta is another example, translating to cooked cream. I’m not sure I’d order it from a menu under that moniker but what a truly delightful dessert it is. Why do we love this easy panna cotta recipe? This vanilla panna cotta recipe is a perfect recipe for beginners and aficionados alike. Deceptively simple, with only 5 ingredients, the secret lies in the cooking technique and using good quality ingredients. Don’t just stick to fresh berries to serve with it. Listen to the seasons and use fresh figs in autumn, rhubarb in winter and stone fruit scattered with sugar and roasted in summer. Panna cotta is also a lovely treat served with cherries at Christmas. If you'd like to perfect your panna cotta skills, we have oodles of panna cotta recipes to choose from. And, plenty of cooling summer desserts that are easy to make at home. 29Traditional vanilla custard
I won’t deny it. There really is a place in your pantry for custard powder, especially when baking melting moments, or jam drop biscuits or to swirl through a cake when a super thick custard is required. But when you get that craving for an old-school custard, one that is velvety, thick, creamy and spiked with vanilla, this is the recipe you need. Why is this our best easy custard recipe? With our simple, foolproof custard recipe, we add just enough cornflour to prevent the eggs and cream mixture from splitting but not so much to make the mixture too thick and gluggy. Serve our favourite custard recipe hot to add warmth to a cold dish like our fruit slice or serve it cold to contrast with a piping hot dessert like golden syrup dumplings. 37Choc ripple cake
A major contender for Australia’s favourite dessert, our no-bake choc ripple cake recipe has only four ingredients making it as simple as it is delicious. Growing up in rural Australia, no get-together would have been complete without the presence of a chocolate ripple cake, especially at Christmas time when there’s either no room in the oven to bake or it’s just too hot to turn it on. What is a chocolate ripple cake? Belonging to the family of sweets that Americans refer to as ice box cakes (meaning the fridge does all the work), chocolate ripple cake is plain chocolate biscuits sandwiched with whipped cream and shaped into a log. After a good rest in the fridge the biscuits soften, the whipped cream sticks the biscuits together and the biscuits take on a cake-like consistency. Our deceptively simple choc ripple cake recipe can be served adorned with berries, splinters of a peppermint chocolate bar or Flake bar, chocolate curls, or just a dusting of cocoa. In fact the only rule is that it must be served on the diagonal to best show off its glorious layers. We here at taste.com.au love our choc ripple cake so much we’ve given it a few different spins, like flavouring it with mint, espresso and Baileys among others. Choc ripple biscuits are naturally vegan so you can even make a dairy-free version of this cake using whipped coconut cream. Apart from being a part of this magical ripple cake, these biscuits can be used in a wide variety of desserts. Check out our ideas for recipes to make using choc ripple biccies, here. 39Jo's white Christmas slice recipe
With the crunch of rice bubbles and sweet pop of cherries all bound together in a creamy white chocolate, our favourite white Christmas recipe is a no-bake, one bowl wonder. Let’s face it, here in Australia no matter how much dreaming we do we’re never going to have a snowy white Christmas. Never to be defeated, we created our own way of celebrating the frosty weather with our Northern Hemisphere friends. Why is this such a great white Christmas recipe? The thing that sets our favourite white Christmas recipe apart from the others is that we use white chocolate to bind the mixture together. Original recipes use copha which is a hydrogenated fat made from coconut oil. While there was always a block in our fridge growing up – after all you never know when you’re going to make a batch of chocolate crackles, it has fallen out of favour in recent years. The white chocolate makes a lovely substitute and you still get that wonderful coconut flavour from the desiccated coconut. White Christmas makes a great edible gift. Simply wrap in cellophane and tie with a ribbon or place in a decorative box.Other edible Christmas gifts include shortbread, rocky road, caramel fudge and nougat.
